Preschoolers are learning so much about the world. In everything they do it is an opportunity to learn, explore and be creative. So often we witness preschoolers playing house, going to work and pretending to do chores. It is their way of making sense of the world and what they see. We have a play kitchen that our daughter has spent endless hours cooking and baking in. Having chores not only helps them master new skills, it gives children a sense of responsibility, develops independence and promotes strong self-confidence.

I create most of our lunches in the kitchen, at lunch time without much thought to packing a lunch. It is the bonus of staying at home with the children. However as time slips by this year, the approaching school year is coming. Although we have yet to decide if our preschooler will be staying for lunch or coming home (we want to understand the options at the school before deciding), packing healthy, fun lunches have been on my mind.

As the kids grow up the importance of these family dinners with only grow with them. Getting Your Kids Hooked on Veggies

I feel very fortunate that my preschooler has an amazing appetite and is willing to try just about anything. My toddler on the other hand is a challenge on the best of days. Since we try to keep our grocery budget in line, we usually have at least one meatless meal a week. When I share this tidbit with other moms, they are usually in awe and often ask what I make. I should mention "meatless" for us means meat. Not necessarily eggs and fish. On our meatless days we opt for refried bean wraps, eggs, steamed fish or homemade mac and cheese. We also have sliced cucumbers at every meal, although with peas or corn as a side. Since the cucumbers are always there, both my kids eat them without thinking about it.

Green Life

In an effort to live green, eco-conscious and more healthy, I have been obsessively attempting to go beyond my comfort level. I am so not a cook. My husband did all the cooking when we were students and later when I graduated and started working. This worked out perfectly as far as I was concerned, however once I started staying home with the kids, it felt wrong to expect him to cook when I was here, like all day. So I find myself attempting all sorts of recipes to keep us healthy and to reduce our consumption of packaging. I actually enjoy cooking, if I have the time and space to do so. It is another form of creative self expression, something I never appreciated before.

Crab Night

Living on the east coast has many advantages. I loved the ocean when we were in California. The smell of the salt air, the sand, the water ... All very appealing especially to one that grew up on the prairies. As I gaze out my window to the harbour, I take a deep breath and taste the salt in the air. I am fully accepting of this being our home. It is new, a little intimidating at times and very far from family, but it is our city now.

Taking advantage of fresh seafood and farmer's markets we are starting to learn to cook the fresh foods of the Atlantic (mostly J since I am not really all that into dealing with our food if it is still alive).

We started off simple. Mussels. Mmmm, J steams then with a broth, garlic and basil ... My mouth is watering at the thought.

Then this past Saturday night we cooked up a couple crab ... J & B picked them out a the fish market and brought them home. I really really cannot touch a squirming nervous animal that totally knows it is about to die. Thankfully my adoring husband has overcome his phobias. The meal was so yummy and we hope to make it a Saturday tradition to make up a fabulous seafood meal, bought locally, prepared together as a family.
